I made roasted chicken breasts on Friday night. Saturday night we had a takeout fakeout at home for our New Year's celebration. Sunday night I made this great dish and we are eating leftovers tonight. If you like amish style chicken and noodles, you will LOVE this dish.
The part I loved about this dish is that I didn't have to roast a whole chicken and debone it. I used two leftover large chicken breasts and shredded the meat. I added some celery, onions, carrots, and broth and let it cook away. I then added parsley and the noodles and let it cook about 40 mins. VOILA! done. Not much effort and a great winter meal.
Creamy Chicken and Homestyle Noodles
leftover chicken shredded
2 cups onion chopped
2 cups celery chopped
2 cups carrots chopped
12 cups chicken broth, I use homemade
1 can evaporated milk
salt and pepper to taste
parsley for garnish
1 package frozen Raemes noodles
Cook onion, celery, and carrots until translucent. Add chicken and stock. Cook 1 hour to soften vegetables. Add noodles and cook about 40 mins. Add parsley and evaporated milk and heat till hot. Serve.
I served this with crusty garlic rolls. It was absolutely the best leftover meal I have ever tasted. I can't wait for the leftovers tonight.

Chicken Club Sliders-Thursday night dinner
This recipe is a great late summer early fall dinner. I make this when I am feeling like I need to go to a restaurant. The kids love it and I serve it with a side of chips. Just like a little bistro by my house.
CHICKEN CLUB SLIDERS WITH RANCH DRESSING
Makes 8 servings.
8 slices bacon
DRESSING:
Salt and Pepper
1 clove garlic, grated
1/2 lemon, juiced
1/2 cup sour cream
1/4 cup finely chopped chives
1 tsp hot sauce
1/2 cup buttermilk
CHICKEN:
1 1/2 pounds skinless boneless chicken breast
A few sprigs flat leaf parsley, finely chopped
1 small red chile pepper, finely chopped
1 lemon, juiced
Salt and lots of pepper
A few sprigs thyme, chopped
2 large cloves garlic, grated
1/3 cup olive oil
TOPPINGS:
2 plum tomatoes, sliced
8 standard size English muffins, toasted
Chopped iceberg lettuce or romaine heart
Heat oven to 375°. Arrange bacon on a broiler pan and bake until crisp, 20 min. Let cool, then halve slices. Heat an outdoor grill or grill pan or cast iron skillet. Combine all dressing ingredients in a bowl, season to taste with salt and pepper.
STEP 2---In a baking dish, whisk together oil, lemon juice, garlic, chile pepper, thyme, parsley, salt and pepper. Add chicken and let marinate 10 min. Grill until cooked through. Let rest briefly, then slice. Arrange chicken on English muffin bottoms. Layer each with 2 half slices of bacon crisscrossed in an "X", some lettuce, tomato, dressing and a muffin top, then SERVE...

The week has gotten away from me and recipe for Hawaiian chicken-crockpot
Well, this week has gotten the best of me. How is it today is Thursday? Well, I opened up the blog to find that I had lots of comments and I am also featured in this week's recipes on Feeding Four .
This is a big deal for me. I started this blog just for fun, and it is now evolving into a showcase area on how I live. The economy and gas prices are part of the equation. Rising food prices are another part of the equation, but we can not change the prices on items we buy, rather we can change our eating habits.
I can not tell everyone enough about the importance of a meal plan, but I am sure glad I made one this week. Tonight was my first evening home all week. On Monday, I made Hawaiian Chicken. This recipe was good, but not great. I think that it was in the crock pot a little long. I think this recipe would be good with a bit more spice. It is a bit like sweet and sour chicken. I used peppers, onions, and pineapple. I think I just had higher hopes for this dish. I am planning on making it again and cooking for a shorter amount of time.
Well, that is what has been cooking in my kitchen this week. I hope to be able to cook a bit more and bake. I am having house guests next week. The dreaded in-laws are coming for a whole week. I may blog a bit about that, but I am trying to figure out how to feed two more mouths for a week without blowing my budget. More on that in a later post.
